There are very few things in life that I absolutely, unmistakably could not survive without. There’s the obvious dry shampoo and Dr.Pepper, but more importantly, I could not live without carbs.
Low carb, no carb, no can do it.
Disclaimer: Do not be frightened by the title of this delicious pasta dish. It is probably as simple as boxed mac&cheese, but will taste more like an entree from your 10 year wedding anniversary dinner.
So what is tortellini with tomato cream sauce? Well, if you don’t know what tortellini is already, you have been missing out big time in the carb department. Tortellini is basically pasta filled with a cheese or meat mixture. For this recipe I use cheese tortellini. Tomato cream sauce is a delicious pasta sauce consisting of two ingredients: marinara + heavy cream. It’s heavenly, and you might want to drink it, it’s that good!
Back story on this dish: When I was a little girl, my dad owned a restaurant in northern New Jersey. This was one of the dishes he made, except he actually made his marinara sauce and we are using jarred marinara sauce in this recipe. In any case, this dish holds many sweet memories of my childhood in my dad’s restaurant. I hope you enjoy it!
Five Ingredients, that’s all it takes!
**Basil is optional, but makes a delicious garnish!
Pro Tip: Most pre made marinara sauces are very chunky, which I am not a fan of. I always blend my marinara sauce in a blender to make sure there are no chunks. This also results in a smooth and creamy sauce.
Step One: Cook tortellini according to package instructions. While tortellini is cooking, cook broccoli in boiling water for 5-7 minutes, or until tender. Transfer broccoli to ice water to keep the broccoli a vibrant green color.
**Ice water stops the cooking process, which prevents the broccoli from turning yellow.
Step Two: Chop ham into square pieces, and then transfer to a deep pan with olive oil. Crisp ham in pan until edges turn brown.
Step Three: Add marinara sauce to crispy ham.
Step Four: Add heavy cream to the marinara sauce.
Step Five: Add cooked tortellini to sauce.
Step Six: Add broccoli to tortellini and sauce. Mix well, and enjoy!
– Frozen Tortellini (1 19oz bag)
-Marinara Sauce (3 cups, or 24oz jar)
– Heavy cream (1 cup)
– Deli Ham (8-10 slices)
– Broccoli (3 cups of broccoli crowns)
– Basil (optional, only use if you’re feeling fancy)
Directions: Cook tortellini according to package instructions. While tortellini is cooking, boil water for broccoli. Cook broccoli in boiling water for 5-7 minutes, or until broccoli is tender. Transfer broccoli to ice water after cooking to keep the broccoli a bright green color.
Heat 1-2 tablespoons of olive oil (or vegetable oil) in a deep pan over medium heat. Cut deli ham into squares, and then transfer to pan to cook. Cook ham until it turns a golden brown color, and until the edges turn crispy. Add marinara sauce, and once heated through, add heavy cream.
Add cooked tortellini and broccoli to the cream sauce. Mix well until combined, and enjoy!
